Curried sausages might be a retro sausage recipe, but in my opinion it's still one of the best ways to enjoy eating sausages. There is something about those browned to perfection sausages cooked in a thick curry sauce along with peas and carrots. Yum!
This recipe is great enjoyed at any time of year, but is especially good on a cold winters night. It's the ultimate warming comfort food.

Ingredients and substitutions

- Olive oil - The olive oil is used for browning the sausages, followed by softening the onion and carrot. Substitute with any frying suitable oil.
- Sausages - Ordinary beef sausages were used in this dish, however feel free to use your favorite sausages.
- Onion - Use a brown, yellow or white onion.
- Garlic - Use fresh or jar garlic. 2 teaspoons of jar garlic is the equivalent of 2 garlic cloves.
- Carrots - The carrots in this recipe were peeled, but the skins can be left on if desired. Just be sure to give the carrots a good wash if not removing the skins.
- Curry powder - The brand of curry powder used can make a huge difference in the end taste of the dish. Use your favorite brand of curry powder in this recipe.
- All-purpose flour - The flour will thicken the sauce.
- Beef broth - Use either a homemade or store bought beef broth. This can be substituted with chicken broth if preferred.
- Frozen peas - Add the peas to the sauce still frozen, there is no need to thaw beforehand.
- Salt and pepper - For seasoning the dish.

Instructions
Brown the sausages all over in a large frying pan. Slice the sausages then set aside.
Without cleaning out the pan, cook the onion and carrot until just softened.
Stir through the plain flour, then gradually add the beef broth.
Return the chopped sausages along with the frozen peas, and simmer for 10 minutes or until thickened.
Hint: There is no need to wipe the pan out after browning the sausages. Those bits left in the pan will add delicious flavor to the sauce.
Variations
Mix these curried sausages up with the following variations.
- Sausages - Use any variety of sausages, whether it be chicken, turkey or even lamb. With so many different sausages available, there are endless flavor combinations to add to this dish.
- Vegetables - This recipe uses carrots and frozen peas, but any vegetables will work great in this meal. This is a great recipe to make for using up those vegetables hiding in the bottom of the fridge.
- Beef broth - If using chicken sausages why not us chicken broth as well? Any broth can be used in this recipe, and will add different flavor profiles to the finished dish.
Equipment
Use your preferred frying pan, skillet or casserole pan to make these sausages. This is a one-pan dish (not counting any sides you may serve it with.
Storage
Store these curried sausages in an airtight container in the fridge for up to 2 days. Reheat using either the oven, stovetop or microwave.
These sausages are suitable for freezing. Freeze in an airtight container for up to 3 months. Thaw in the fridge overnight, then reheat according to the above directions.
Top tip
The sausages don't have to be cooked through in the first step. The most important thing is that the sausages are browned all over, which will add flavor to the dish. The sausages will continue/finish cooking in the sauce.
FAQ
This recipe uses all-purpose flour to thicken the sauce, however, that step could be omitted. Instead, mix 2 tablespoons of cornstarch (cornflour) with 2 tablespoons of water, and add before bringing the sauce to a simmer.

- ½ tablespoon olive oil
- 500g sausages
- 1 onion, sliced
- 2 garlic cloves, minced
- 2 carrots, peeled, halved lengthways and sliced
- 1 tablespoon curry powder
- 3 tablespoons plain flour
- 3 cups beef stock
- 1 cup frozen peas
- Salt and pepper, to taste
Instructions
- Add the olive oil to a large skillet and place over a medium-high heat. Add the sausages and cook, turning often, until browned all over. Remove from the skillet, slice, and set aside.
- Add the onion and carrots to the skillet and cook, stirring, for around 4 minutes or until starting to soften. Add the curry powder and cook, stirring, for around 1 minute or until fragrant.
- Add the flour to the skillet and stir through until well combined. Gradually add the beef broth, stirring continuously.
- Return the sliced sausages along with the peas to the skillet. Simmer for 10 minutes, or until the carrots are soft and the sauce has thickened. Season to taste with salt and pepper.
Notes
- The sausages do not have to be completely cooked through in step 1. They will continue cooking once added to the sauce.
